Creamy Cinnamon Root Vegetable Soup
Warm and creamy, this soup will be a wintertime favorite.
Ingredients
- 5 Cups Hot Water
- 2 Tsp. Vegetable Stock Powder
- 1 Pound (500g) Carrots
- 1 Pound (500g) Potatoes
- 8.8 oz. (250g) Turnips
- 8.8 oz. (250g) Beets (Beetroot)
- ½ Tsp. Ground Cinnamon
- ⅛ Tsp. Ground Cloves
- 10 Fl oz. (300ml) Cream
- 1 Tbsp. Brown Sugar
Instructions
- First place the water in a large saucepan or stock pot then stir in the vegetable stock powder.
- Peel and chop the vegetables then add to the pot with the cinnamon and cloves. Bring to a boil then simmer for 30 to 40 minutes until the vegetables are tender.
- Take off the heat then puree the soup with either a blender or stick blender.
- Return to the heat then stir through the cream and brown sugar. Serve as soon as the soup has heated through. Do not let the soup boil after the cream is added.
- Add an extra sprinkling of cinnamon or cinnamon sugar over the top of each bowl if desired.
Notes
You can adjust the vegetable amounts depending on what you have on hand. Canned beetroot can also be used if you can’t find fresh.
