Creamy Pepper Chicken Casserole

This recipe for creamy pepper chicken casserole combines shell pasta, cream of mushroom soup and freshly ground black pepper with a tomato and cheese top for a fresh summertime meal.

This is easy to put together and uses pantry basics so its easy on the hip pocket.

Gluten and Dairy Free Options

For gluten free; check the soup for gluten and replace the pasta shells with your favorite gluten free pasta. For dairy free; use dairy free mushroom soup. Replace the milk with lactose free milk and use lactose free cheese if you can’t tolerate hard cheeses such as cheddar.

Saving Money

Save money by buying items you use often such as cream of mushroom soup in bulk. It has a long storage life if stored in a cool dark place such as your pantry.

Buy chicken in bulk and when it goes on special. Divide it into 1 pound portions when you get home then freeze for up to 6 months. Thaw by placing in the fridge overnight or on defrost in the microwave.

Leftover casserole can be stored in the fridge for up to three days then reheated on a plate in the microwave with a microwave safe cover on high for 2 minutes, stir then heat for a further minute or until heated through.

Leftovers can also be frozen in freezer safe containers. It is best to freeze in single serve portions. Reheat in the microwave on high for 4 minutes, stir then heat for a further 2 to 3 minutes until heated through.
