For gluten free; replace the flour with a gluten free flour blend for baking and use gluten free baking powder. For dairy free; replace the milk with lactose free milk or oat milk then replace the butter with a dairy free spread.
It is best to store the cornbread in the fridge to extend its shelf life and maintain its freshness. Cover with foil as this clings better to the tin pan.
To reheat the cornbread; cut a square in half then place on a microwave safe plate. Spread butter on each half then microwave on high for 30 seconds or until the butter is melted.
