Mexican Chicken Cornbread Casserole

This recipe for Mexican chicken cornbread casserole combines spicy Mexican flavours with a sweet cheesy cornbread topper.  It can be a one pot meal or serve with salad and garlic bread.

Gluten and Dairy Free Options

For gluten free; replace the flour with either a measure for measure gluten free self raising flour or use a gluten free plain flour blend with 3 teaspoons of gluten free baking powder. For dairy free; use a lactose free milk or oat milk. Replace the cheese with lactose free or dairy free cheese if you can’t tolerate cheddar.

Saving Money

Save money by buying pantry staples such as cornmeal and flour in bulk. Store in airtight recycled jars in your pantry for up to a year. Tinned tomatoes can be purchased in a pack of 12 or look for commonly used spices in bulk packs.
