The best zucchini flowers for stuffing are those which have just opened. Both male and female flowers can be stuffed and fried. Cut the flower stem 1/2 inch to an inch (1cm to 2.5cm) below the base of the flower. If there is a small zucchini attached to the flower then cut the zucchini at its base then fry the zucchini with the flower.
Gluten and Dairy Free Options
This recipe for pan fried stuffed zucchini flowers is gluten free however it would be wise to check the ricotta for gluten. For dairy free; replace the ricotta with lactose free ricotta or lactose free mozzarella or cheddar cheese. Simply combine grated mozzarella with the basil then stuff the flowers omitting the lemon zest.
Save money by only buying ricotta when you see it on special. Plan on making something else with the leftover ricotta such as lasagne or use in breads and muffins in place of sour cream.
The olive oil can be replaced with sunflower oil which is cheaper however it is worth buying olive oil in bulk packs when you see them on special. It may cost more initially but it will go a long way. Store in a cool dark place then seal the container properly as olive oil, like wines, don’t like oxygen.
