This recipe for simple banana pancakes is an easy recipe that makes plenty for freezing. These pancakes are moist and moreish, a must for a weekend treat or any day or the week. They are wonderful with either honey or maple syrup – oh and don’t forget the butter!

Gluten and Dairy Free Options
For gluten free; replace the flour with a measure for measure gluten free flour blend for baking and use gluten free baking powder. For dairy free; replace the milk with lactose free milk or coconut milk.
To freeze any leftover banana pancakes; wrap each one in plastic wrap when cool then place in the freezer or place in a large freezer bag with a layer of baking paper in between so they are easy to separate then seal the bag and freeze.
To reheat your pancakes; place frozen pancake on a plate and cover with a microwave safe cover and heat on high for 1 minute to 1 minute and 30 seconds. The cover will help it to steam which stops the pancake from drying out.
Save money by buying common baking ingredients such as flour, sugar and baking powder in bulk. They have a long shelf life if stored in a cool dark place in an airtight container to keep out pests.
