Slow Cooker Beef and Bean Stew

This recipe for slow cooker beef and bean stew is easy to put together and fills your home with wonderful aromas.  This is a healthy comforting dish for a cold winter’s night.

Saving Money

If you have a large slow cooker consider doubling the recipe. Any leftover will keep for 3 days if stored covered in the fridge.  Reheat by placing one serving in a microwave safe bowl then cover.  Heat on high in the microwave for 2 minutes, stir then heat for 1 ½ to 2 minutes more.

Otherwise, freeze 1 serve portions in microwave safe freezer containers. Reheat on high for 4 minutes then stir and microwave for a further 2 to 3 minutes until heated through. This will safe on time and energy as you will be using the oven less.

Any type of bean can be used in this recipe. Consider buying your favorite bean dried in bulk. They will keep for 2 to 3 years when stored to a cool dry place. Soak overnight or simmer for 30 minutes until soft before using.
