Spaghetti Bolognaise with Spinach
Ingredients
- 1 Pound (500g) Beef Mince
- 1 Large Onion
- 1 Large Carrot
- 2 Cloves Garlic
- 1 Tsp. Oregano
- 1 Tsp. Brown Sugar
- 24 oz. (700g) Passata Sauce
- Salt & Pepper
- 2 Bay Leaves
- Spinach Fettuccini or any pasta you have on hand
- 8 Silverbeet Leaves or Spinach
Instructions
- In a large saucepan brown the beef and the chopped onion. Use a peeler to shred the carrot then add the shreds to the pot with the garlic and cook over medium heat a minute more.
- Next add the passata sauce, oregano, sugar, bay leaves and salt and pepper to taste. Cover and simmer on low for 30 minutes.
- Meanwhile cook the pasta to the packet directions. I usually use half a packet for four so there is plenty of sauce, but you may want to use more.
- Wash the silverbeet or spinach leaves, slice across and add to the sauce. When the leaves have wilted down add the cooked pasta, adding a little of the pasta water if needed.
Notes
This is a good basic recipe that can be easily adapted to whatever you have on hand. Try adding olives or grilled eggplant for a Mediterranean feel.

This recipe is dairy free. For gluten free; replace the fettuccini with gluten free fettuccini.

Buy beef mince in bulk packs then divide into 1 pound portions when you get home. Place today’s date on the container then freeze until needed. Beef mince will freeze for six months.
Consider buying spices such as bay leaves in bulk. They have a long shelf life up to 2 years if stored in a cool dark place such as your pantry.
Bay trees grow well in Mediterranean climates. They are a slow growing tree but have beautiful white flowers in the spring and you will never have to buy bay leaves again.
